What does ‘Mascobado’ mean?
How is your Mascobado Sugar made?
Is it organic?
Is it Fair Trade?

Time and again
I have been asked.
Here are the answers,
At long long last:

Mascobado comes from Spanish,
Meaning ‘raw’ or ‘unrefined’.
Ours is free of harmful chemicals
And rich in vitamins and minerals.

Our Mascobado is obtained
By evaporating juice from sugar cane,
A traditional method of production
In line with Filipino ancient notion.

Without centrifugal processing,
Nutritious molasses remains.
CERTIFIED ORGANIC by IMC,
It’s a FAIR TRADE product of PFTC.

Our old bamboo booth may look romantic,
But it’s steaming hot when it’s hot.
And behind its flair are signs of wear and tear:
Last week it rained in there and there and there.

Now mushrooms and fungi have started to grow,
Mini jumping creatures as well as mould.
So this time we took an open tent, one of those,
But rain poured in FROM ALL SIDES, and so …
