Coco Nectar would certainly go well with muffins. But may I assume you are baking with healthy sweetener such as Mascobado Sugar or Coco Nectar or granulated Coco Nectar? Would be such a pity otherwise. And you might like to enhance flavour by adding pure cacao and and and … So much to explore … FM:)
Ya, I use Mascobado Sugar . :) I’m going to host baking gathering in Nov and will introduce your giner chew to my fellow baking friends. So I’ll soon make an online order next month. :)

I used your favourite Coco Nectar to bake a very special bread to share with our customers at the Sunday Farmers’ Market last week.
Ingredients: Organic Coco Flour, Glutinous Rice Flour, Kamut Flour; Virgin Cocont Oil as fat; Melted Cacao Tablea 70% Pure Cacao & 30% Coco Nectar; Coco Nectar as sweetener; Cinnamon, Turmeric, Nutmeg, Natural Sea Salt; Rice Wine.
The outcome is a bread with the heaviness of a German bread, but soft as an English bread and moist like a Chinese steamed bun.
