What did you and your good people do to your Cacao this time?

They are simply HEAVENLY!!!

The Cacao Nibs are full of aroma and taste, even better than the best dark chocolate around town.

The Cacao Beans are crispy and much less bitter and sour than before.

The Tablea is likewise blissful!

I have ordered too little!

Self-made Fair Trade Truffles

15/130 Self-made Fair Trade Truffles

Fair Trade Ingredients:
Tablea (Pure Cacao Tablets) 250g
Coco Sugar from Nectar 200g
Macobado Sugar 50g
Coconut Jam 125g
Macapuno Preserve 125g
Virgin Coconut Oil 30ml
Ginger Tea Powder 10g
Turmeric Powder 2g
Natural Sea Salt 2g
Cashew Nuts (unsalted, slightly roasted) 100g
Desiccated Coconut 400g

Non Fair Trade Ingredients:
Organic Rolled Oats 100g

Preparation:
1.  Slightly brown Rolled Oats in pan.
2.  Slightly brown Cashew Nuts in pan and split into halves.
3. Melt Tablea tablets in pot. (Take care not to burn the cacao.)
4. Add Coco Sugar, Mascobado, Ginger Tea Powder, Turmeric, & Salt.
5. Mix and stir to form a thick paste, add a little water if necessary.
6. Add Coco Jam,  Macapuno Preserve, and Virgin Coconut Oil.
7. Mix and stir well.
8. Add Desiccated Coconut and split Cashew Nut and stir well.
9. Form into small balls with two teaspoons.
10. Roll in Desiccated Coconut and place in forms.
11. Store in freezer.
12. Serve chilled.

KABLON FARM FOODS

KABLON FARM FOODS, an organic farming & food processing community in Tupi, South Cotabato, Mindanao in the Philippines. The community is made up of a few dozen families and has a 70-hectare organic farm and a food processing centre. Their products range from pure cacao tablets, cacao beans and cacao nibs, to fruit juices, fruit preserves, and spices. New star products include coconut sugar, natural crystals of Pure Coconut Nectar and a whole range of jams and preserves processed with the low GI natural sweetener. Their very latest project is on developing Nectar Cacao, ‘chocolate’ made up of nothing else but pure cacao and coconut nectar! A sweet natural treat indeed!

KABLON products do more good than pleasing our palette and fortifying our health. In 2001, impressed by KABLON products introduced at a peace and development seminar, a commander of the Moro National Liberation Front decided to persuade MNLF members in his hometown to drop their guns and pick up their hoes again to dig and plant and produce items like KABLON to secure a sustainable wholesome future.

For its pioneering efforts and outstanding achievements, KABLON FARM FOODS has received numerous rewards. Recently, it has also been selected by APFTI (Advocate of Philippine Fair Trade Inc.) to participate in an EU programme to assist capable small Fair Trade producers to meet requirements of the European market.

KABLON FARMS 椰糖來自菲律賓南部棉蘭老島。生產單位 KABLON FARM FOODS 佔地70公頃,設有食品加工廠。參與生產者共數十戶人家。他們從事有機種植及農產品加工。產品包括純可可片、可可豆、可可粒、果汁、果醬、乾果、香料等。最新明星產品是由椰子花蜜提煉而成的椰糖及一系列由這低GI 升糖指數產品製成的果醬,以及由純可可、椰子花蜜製成的椰蜜可可「黑巧克力」。 真個令人饞涎!

Break cacao tablet into two

Pre-warm cup with boiling water (for best results)
先把杯用沸水加熱,效果更佳

Put half-tablet into a cup
放半片于杯中

Pour a little boiling water to cover half-tablet
加少許沸水 把可可片蓋過

Don’t let it swim in water
設勿讓可可片在水中游泳

Let half-tablet soak for 15 to 20 seconds
讓可可片泡十五到二十秒

Mash it into paste with teaspoon
用茶匙壓攪成糊狀

+ boiling water … a little at a time
加沸水, 一點兒地加…

+ sweetener to taste*
依隨口味加增甜劑**

+ milk or coco milk or soy milk to neutralise natural acidity (optional)
中和可可天然酸味,可加奶,椰奶或豆奶等

Voila 完成了

> Here is our Tablea Story

> A friend who has an organic shop has taken 3 rolls from us to try to sell.
> Three days ago, I asked him how many he has sold.
> He said: one.

> From November 25 to now, we have gone to 9 market days:
> 5 Sunday Farmers’ Market Days from 9am to 5pm
> 4 days at Sai Kung Christmas Fair from 12 to 8pm.

> We had 100 rolls to start with.
> We sold only 3 or 4 on each of the first two market days,
> but sales picked up speed, and now we have only 4 left!

> You know why we have been able to sell so many?

> I have worked very hard to collect nutrition data about cocoa.
> And I have spent a lot of time to sort out the heap of info
> so that we can make a clear presentation to our customers,
> verbally as well as on a mini-poster.
> Our customers and potential customers have all been impressed.

> Two days ago I was invited to talk about Fair Trade
> at the South China Agricultural University in Guangzhou City,
> the biggest agricultural university in China and in SE Asia, they say.
